A question: Is there a possibility to debug the U-Boot Boot Loader? - Can I use PowerTAP Pro with CodeWarrior?

Yes, of course. What do you think how we could develop it without being able to debug it?

You can, but you may run into certain problems. My recommendation is to use the BDI2000 instead.
