Hello,
I see the typical ARM target for u-boot is an arm-linux toolchain for a CPU with an MMU, like the ARM720T. Would it be a trivial or rather involved task to compile u-boot with an arm-elf toolchain for a CPU without an MMU, like the ARM7TDMI?

It is trivial (assuming you have a port of U-Boot for your processor and board).
U-Boot does not need any MMU.
